Classic Sugar Cookies


2 sticks of unsalted butter, room temperature
1 3/4 cups sugar, extra for coating
1 egg
1 teaspoon J.T. Copper Classic Vanilla Extract
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt


Preheat oven to 350º F. Cream together butter and sugar until light and fluffy, about 2- 3 minutes. Add egg and vanilla. Beat until fully combined. In a separate bowl, combine dry ingredients. Add to wet mixture and stir until fully incorporated. Using ¼ cup, scoop dough and roll into ball. Coat each cookie with sugar before placing on a lined baking sheet, making sure each cookie is spaced 2 inches apart. Press each cookie lightly and bake for 10 minutes, rotating pan halfway through.
