Each batch of JT Copper extract is crafted by hand in Floyd, VA. Unlike the mass-produced products found on store shelves, we use traditional techniques to preserve the aromas and intensify the flavor profiles of the ingredients. We do not use corn syrup or propylene glycol in our extracts.
Over the course of several months we worked to develop our process; countless experiments, tweaks, and variations later, we perfected our method and crafted a handful of recipes that yield the highest-quality vanilla extract you can find.
Our recipe begins with micro-distilled moonshine sourced right here in the heart of Appalachia. We take the pod of the Madagascar Vanilla Bean, split it down the middle, and scrape out the seeds - these are the little black flecks you often see in real vanilla bean ice cream. Both the seed paste and its pod are then placed into our moonshine base, and the clock begins.
Over the next 6-8 weeks, the mixture steeps. Once complete, the result is a robust, richly-flavored vanilla extract that is a delightful enhancement to any baked goods or beverages. For more ideas about how to use JT Copper Extracts, please click here!
We are committed to handcrafting our extracts from pure, simple ingredients that are thoughtfully sourced, and as local as possible. We believe that by adhering to this commitment, time and time again we will create the high quality, intensely flavorful product that belongs in every pantry.
As lifelong baking enthusiasts, founders Theda Anderson and Jolie Greatorex have always had a deep appreciation for premium ingredients and rich flavors. Turned off by the fillers, additives, and synthetics commonly found in store-bought flavorings, both bakers eventually began preparing their own extracts as a way to ensure that only simple, wholesome ingredients were going into their recipes. What they discovered was that these home-brews yielded a more robust flavor than any commercial alternative, and thus, they became the standard in their respective kitchens.
One Thanksgiving, after running out of vanilla extract on the most important cooking day of the year, the proverbial light bulb went off for Jolie - not only should she make more extract to keep on hand, she should also bottle it and sell it for others to use in their kitchens. Later that day, she shared this idea with Theda and just like that, a business idea began to take shape.
As the concept began to develop further, Theda, in a fortuitous “ah-ha” moment, came up with the idea to use moonshine in place of a more typical vodka or bourbon base. Not only would this addition give JT Copper extracts a more distinct flavor, it would also help to embody the culture and history of the community from which it came.
The final catalyst was the support and mentorship from the local community found through an entrepreneurship training program. This program ultimately provided the impetus to move from tabletop discussion to a full-fledged product line of exceptional, handcrafted vanilla extracts.
